Discussion on the Gelatin

Abstract: Gelatin is a partially hydrolyzed product of the collagen. Most gelatins are extracted from animal tissues, such as skins and bones, etc. Gelatin has wide applications in food, pharmaceutical, photographic, and industrial areas. This paper focuses on the source and composition of gelatin, classification and application, and potential dangers.
